This summer, join Alex and me with one of our new favorites: The Spicy Cajun Skillet! Transplanted to the south, we’re amazed at the variety of country cooking. One newly found favorite is Cajun cuisine!
Cajun and Creole cuisine claim the same city and the same state, but they are largely different in terms of history. Two of the distinct factors separating the two cuisines boil down to region and one ingredient. Traditionally, Cajun cuisine is “country style” cooking, whereas creole is “city style” cooking. The single dividing ingredient is the tomato. Creole food is rich in tomatoes, while the fruit is typically absent in Cajun dishes. (Yes, believe it or not, tomatoes are fruit!)
The Ingredients!
I have chosen my favorite ingredients for this skillet. Feel free to add your own special touch as well!
Potatoes
10-15 Baby Potatoes
Carrots
5 Large Chopped Carrots
Onion
1 Medium Chopped Onion
Sausage
Cajun Style Smoked Sausage
Broccoli
Steamed and then Baked is the easiest!
Spice
"Slap Ya Mama"
Asparagus
Blanched is the best!
Peppers
2 Medium Chopped Bell Peppers
TIPS:
- I love using "Hillshire Farm Cajun Style Andouille Smoked Sausage!"
- I recommend blanching the asparagus.
- Additionally, I recommend roasting the broccoli for a great crispy flavor!
- Our favorite spice is "Slap Ya Mama!" The spice has a great kick! Remember, you can always add more spice, you cannot take away.

The Ingredients:
- 1 Package (14 oz) of Hillshire Farm Cajun Style Andouille Smoked Sausage
- 1 Package Frozen Broccoli
- 2 Tbsp Olive Oil (for the broccoli)
- 3 Tbsp Garlic Salt (for the broccoli)
- 1 Bunch of Asparagus
- 2 Cups of Water
- 1/2 Package of The Little Potato Company Baby Boomer Yellow Potatoes
- 1 Tbsp Olive Oil
- 4 Carrots
- 1 Medium White Onion
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 2 Tbsp of Slap Ya Mama Hot Blend, Cajun Seasoning
- (Adapt the recipe to your liking! Add or interchange ingredients for pork, shrimp, chicken, zucchini, or squash.)
Carrots
My mom attributes her great vision to eating carrots! But don’t eat too may or you’ll turn orange!!
Peppers
I personally love red bell peppers! Add your special touch too!
Asparagus
Asparagus and broccoli are two of my favorites! Be sure to blanch the asparagus and bake the broccoli in the oven.
The Directions:
- Turn oven to 400° F. Prepare a baking sheet for the broccoli.
- Microwave the broccoli, place onto the baking sheet. Lightly coat with olive oil and garlic salt. Bake for 20-30 minutes.
- Begin by chopping all vegetables and the sausage.
- In a large skillet, cook the sausage. I prefer to cook the sausage separately to assure there is a good sear to the meat. Once, fully cooked, remove sausage from skillet and let rest on a paper towel (removes any unwanted grease).
- Add the remaining olive oil to the skillet. Add chopped potatoes and carrots. Cook for 15-20 minutes or until the desired softness.
- In a medium-sized pot, boil 2 cups of water and add the asparagus. After the asparagus has boiled for 5 minutes, remove and blanch.
- Add onions and peppers to the skillet. Combine 2 tbsp. of Cajun seasoning to the potatoes, carrots, peppers, and onion. Cook for 5 minutes.
- Add broccoli, asparagus, and sausage to skillet. Combine remaining Cajun seasoning and cook for 5 minutes. And ENJOY!!

Cajun food is wonderful! I may have used a little to much seasoning because this dish was spicy! Really great once we had some milk with it lol!
