With 5 hungry children, my mom is naturally a master chef! Growing up, every meal was divine! Mom always elevated the normal family dishes into extravagant delights. Some evenings, she made even more special! Those nights, mom treated the family with a dish that everyone knew took mom many hours to create. The delicious cheesy ground beef empanada recipe is one tasty treat that took many hours to make.
Due to being a family of seven, empanadas were rarely made in the Renfroe Household. Seven people easily devoured all mom’s hard work in 2 lightening fast minutes! Nevertheless, I cherished the times when this tasty dish was made, so delicious!
While reminiscing on childhood favorites with my husband, Alex, my mind raced to the empanada recipe. Naturally, Alex eagerly waited for me to make him this delicious treat.
To our delight, the tasty empanada recipe provides for way more meals as a little family of two than as a child in a family of seven. Alex and I froze about two dozen empanadas for later delight. After microwaving for one minute, we have an easy yet delicious empanada dinner in weeks to come! This frozen empanada recipe will keep for about one month! Be sure to properly seal to prevent ice crystals.
This easy empanada recipe also provides for great quick meals when visitors arrive! My siblings visited mid-July and without spending all day in the kitchen, we still enjoyed this savory treat!
I’m so proud of my siblings! For two weeks, they lived and worked aboard THE GLORY. The huge relief ship is home to an incredible selfless family doing the Lord’s work on land and sea. After natural disasters, the ship loads supplies and sets course to assist in relief efforts anywhere and everywhere. They are specifically working in Puerto Rico.
Naturally, my hungry siblings were ready to relax after working hard in Puerto Rico and aboard the ship. The cheesy ground beef empanadas with slices of jalapenos and green bell peppers are perfect for lunch or dinner. I also made them my yummy Blueberry Muffins for a tasty breakfast! Time spent with family means so much to us! My dear siblings brought so much love and laughter to our lives. I’m reminded of the beautiful Bible verse, Hebrews 10:24.

So often today, we encounter families fighting, couples arguing, wives nagging like a dripping faucet, and too many addicted to their cell phones. My husband and I were overjoyed to be with the gentle, intentional, and encouraging hearts of my siblings.

The Best Cheesy Beef Empanada Recipe
Ingredients
- 2 lb. ground beef
- 1 white onion diced
- 4 cloves garlic minced
- 2 jalapeños seeded and diced (optional)
- 1 green bell pepper
- 2 tsp oregano
- ½ tbsp paprika
- ½ tbsp chili powder
- ½ tbsp salt
- ½ tbsp garlic salt
- ¼ tbsp black pepper
- 3 cups cheese Mexican Cheese
- 4 refrigerated pie crusts
- 1 egg
- 1 cup water
- 1 tbsp large kosher salt
Instructions
- Preheat oven to 425° and line baking sheet.
- Cook beef until browned. Add onion, garlic, jalapeno, bell pepper, and saute.
- Season with salt and pepper. Add oregano, paprika, chili powder, and garlic salt. Taste and add additional if necessary. Add cheese. Continue to cook for 3-5 minutes and then remove from heat.
- Roll out the pie crusts until they are slightly larger and thinner. Cut circles with a diameter of 4½ inches. On half of the circle, place 3-4 tablespoons of beef. Dip your fingers in the water and lightly dab the edge of the pie crust. Carefully fold over half of the circle and seal the edge. For a decorative touch, take a fork and press down on the half-circle. Continue this process gathering scraps of dough until no dough remains.
- Place your 25-30 empanadas on a baking sheet. Whisk the egg and lightly brush the top of the empanadas. Sprinkle large salt on top. Bake for 15-20 minutes or until golden on the edges.
