I love summer! The warm evenings spent on the porch drinking a chilled ice tea, or the hot mornings soaking in the sun. Summer is the best! Naturally, the best summer dishes are filled with the freshest summer ingredients. I personally love my Spaghetti Salad Recipe, which I have been eating for years! And I hope you enjoy it too!
This spaghetti salad has been a favorite of mine since graduating from college in 2015. I was living with my best friend, in my first apartment, with my first post-college job, and desperately needed healthy, yummy, EASY meals.
This recipe is the simplest dish for a semi-college student. I wasn’t ready to dive into the cooking arena, and I still wasn’t completely sold on food prep. However, this dish made me feel like a five-star chef and I had enough meals to last me all week!
I believe the greatest part of the spaghetti salad is how interchangeable it is! My mom loves olives, thus she adds olives. A good friend of mine loves tomatoes, she adds way more than me! I love bell peppers and cucumbers, so I add lots of those vegetables! My sister doesn’t like cheese, and my other sister can’t eat cheese, so they omit the cheese altogether. This spaghetti recipe is incredibly versatile! Choose what ingredients you love the most and add them to this dish.
Additionally, protein can easily be added to this spaghetti salad recipe! I typically add mini pepperonis for a little Italian flare. Chicken and ham are easy additions as well.
Ingredients for the Spaghetti Salad
- Angel Hair Spaghetti
- Cucumber
- Roma tomatoes
- Red bell pepper
- Green bell pepper
- Red onion
- Cheddar cheese
- Parmesan cheese
- Olive Garden Dressing
- Paprika
- Garlic salt
- Fresh cracked black pepper
Additionally possibilities:
- Zucchini
- Yellow squash
- Olives
- Chicken
- Pepperoni
- Turkey
Directions
- Cook the pasta to your desired consistency. Chill pasta.
- Chop all the vegetables into small cubes. Small cubes enable many flavors in one bite.
- Once pasta is chilled, combine all ingredients. Chill again for the desired time and serve cold. EASY and DELICIOUS!
Summer Spaghetti Salad
Ingredients
- angel hair spaghetti
- 1 green bell pepper
- 1 red bell pepper
- 1 cucumber pealed
- 1/2 red onion
- 4 oz cheddar cheese cubbed
- 1/2 cup parmesan cheese
- 1 tsp paprika
- 1/2 tsp garlic salt
- 1/4 tsp fresh cracked black pepper
- 3/4 cup Olive Garden Dressing
Instructions
- Boil water and cook pasta. Chill pasta.
- Chop all vegetables into small cubes. Combine vegetables, pasta, dressing, and spices.
- Chill for 30 minutes and serve! Enjoy!
